TGATG #19

Sometimes I still feel like I am playing house. Like I am the babysitter and any minute the parents are going to come home and thank me and hand me $50. When I was little, there were certain things that I imagined I would do that would feel extra grown up. I can’t exactly identify them ahead of time, but when I do one, I get an out-of-body experience, sort of like deja vù. It’s like I’ve crossed this imaginary line into mythical adulthood.

Well one of the things that gives me this feeling is when I bring a meal to someone. We just hired a new pastor on staff and he and his family just moved to Tampa from out of state. I signed up to bring them a meal as they are just getting settled in.

I made Naptime Kitchen’s Creamy Chicken Enchiladas and they were a huge hit! I have made them before and everyone that had them loved them. They are the perfect thing to make in this situation because there is plenty of food to give and keep for your own family. I filled two 8×8 tinfoil pans that I gave away and I had a 9×13 pan for us. I also made yellow rice and chocolate chip cookies. This meal is kid friendly and easy to make. If you are planning on only making it for your own family, don’t bother cutting the recipes in half. It is great to freeze and have later. Shortly after Lottie was born I made the recipe and put two 8×8 pans in the freezer. It is the best when you have a dinner ready to go into the oven like that.

As I was putting Lottie in the car and loading up the meal, it hit me that this is the kind of adult stuff I imagined and always wanted to do. Here I am taking and making a meal for the new pastor and his family while also toting around my own little one. It feels quaint and I love it. After receiving so many wonderful meals from our community after Lottie was born, it is such a blessing to get to bless someone else with the same act of love.
